YUAN XING CHAOZHOU RESTAURANT

A 66 Year Journey of Teochew Culinary Heritage

The Chinatown Era: Wayang Street Roots (1960s - 1972)

The history of Yuan Xing is more than a timeline of culinary dates; it is a 66 year journey of cultural heritage, culinary resilience, and the mastery of traditional Teochew cuisine. The narrative began in the 1940s when Mr. Koh, an exceptional culinary master from Swatow, China, migrated to Singapore. Carrying the authentic flavor profiles of his homeland, he introduced the true essence of Chaozhou cooking to the bustling heart of Chinatown’s entertainment district on Wayang Street.

By 1960, the elder Mr. Koh’s kitchen had officially established its name, quickly becoming an indispensable cultural landmark for local theater patrons, opera-goers, and residents alike. The street-side stall was defined by the rich, comforting aroma of charcoal fires, simmering broths, and a steadfast commitment to traditional, labor-intensive preparation techniques. It was a beloved spot where the community gathered around boiling pots on wooden stools to savor honest, authentic dishes that carried the warmth of home.

The Whampoa Era & Culinary Stewardship (1972 - Present)

In 1972, amid Singapore’s historic urban redevelopment, Chinatown underwent massive renewal. The restaurant—then operating under the name Guan Hin—was resettled to its current, cozy home at Block 34 Whampoa West. For 54 years, our doors in Whampoa have remained proudly open, standing firm as a culinary anchor while the city transformed into a global metropolis. The transition from a busy open-air street stall to an air-conditioned brick-and-mortar restaurant allowed us to welcome multi-generational families in comfort, yet we never compromised on the soul of our cooking.

Following the passing of the elder Mr. Koh in 1998, his son, Mr. Henry Koh (Koh Hon Chai), stepped forward to guide the kitchen and preserve his father’s culinary legacy. Mr. Henry Koh has dedicated his life to maintaining the rigorous training, ancestral secrets, and hand-crafted culinary details that define the ‘Teochew Way’. This unwavering dedication to heritage was celebrated in 2006, when Yuan Xing was honored by The Straits Times as one of the ‘Top 50 Restaurants in Singapore.’

“

“Every time you sit down at Yuan Xing, you are joining a family dinner that has been 66 years in the making. We are honored to welcome back customers who dined with us as children in Chinatown, now bringing their own grandchildren to taste our heritage.”

The Culinary Masterpieces: Our Historic Signatures

Our kitchen continues to preserve classic Teochew techniques that are increasingly rare in modern gastronomy. We select the finest ingredients and prepare each signature dish with rigorous precision, ensuring that the traditional flavors remain beautifully unchanged.

Braised Chestnut Duck

A tender, flavorful masterwork. Slow-simmered for hours in our ancestral Master Stock, allowing sweet chestnuts and aromatic Chinese herbs to infuse deeply into the tender duck meat.

Braised Eel

A dish of extraordinary balance and delicate texture. Prepared with extreme culinary precision to preserve the natural sweet flavor of the sea eel while absorbing the savory depth of our braised sauce.

Celebration Roast Piglet

Our legendary banquet staple, highly sought after for family reunions. Renowned throughout Singapore for its paper-thin, exceptionally crispy crackling and juicy, perfectly seasoned meat.
